Easy Beef and Cheese Enchiladas ❤️‍🔥 I don’t know why enchiladas ever fall out of my regular dinner rotation, because every time I make them I wonder why I’m not doing this more often. They’re never quite as difficult as I build them up to be in my head, and growing up in Houston, good Tex-Mex was never hard to come by, so making enchiladas now always feels like a little nod to home. I wanted to keep things pretty simple, so I went with classic beef and cheese and a shortcut homemade enchilada sauce. And while you absolutely can open a can, making this one yourself really doesn’t add much work. It comes together quickly on the stovetop with a simple roux, tomato sauce, broth, spices, and a squeeze of lime. Full recipe is in bio! #beefandcheese #enchiladas #mexicanfood #texmex #texmexfood
